Grown at 1,650 MASL, this lot highlights the expressive potential of the Sidra cultivar through an extended and carefully controlled fermentation.\u003c\/p\u003e\n\u003cp\u003eRipe cherries are selectively hand-picked and floated to remove under-ripe and defective fruit before undergoing 92 hours of anaerobic fermentation in sealed bags. After depulping, the coffee is sealed again for a further 72 hours of oxidation. It is then washed, deliberately retaining around 75% of the mucilage, before being dried slowly on raised African beds for 10 days.\u003c\/p\u003e\n\u003cp\u003eCultivares is a family-led project that reflects Santiago’s growing commitment to specialty coffee.
