The farm’s high elevation and mountain environment provide excellent conditions for producing high-quality coffee.\u003c\/p\u003e\n\u003cp\u003eWith Jorge’s background as a forestry engineer, much of El Jaragual is dedicated to sustainable forestry, combining pine plantations with protected areas of native forest. Coffee is grown alongside plantain and other native agroforestry species, with seven varieties currently cultivated on the farm.\u003c\/p\u003e\n\u003cp\u003eEl Jaragual uses carefully controlled processing methods, including extended fermentation with yeast inoculation and temperature adjustments. Warm-water rinses and cool-water quenching help enhance and stabilise the aromas developed during fermentation, creating a considered balance between traditional processing and modern techniques.\u003c\/p\u003e\n\u003cp\u003eA standout coffee and a firm favourite from last year, this is one that really makes you stop and question what you’re actually smelling and tasting.
