The Gasca family has built Zarza around a combination of tradition, innovation and a relentless focus on quality, with a strong emphasis on traceability and sustainable farming. Alongside coffee, the family also keeps bees, helping to support biodiversity across their land.\u003c\/p\u003e\n\u003cp\u003eThis Pink Bourbon is a beautifully expressive natural coffee, produced with meticulous attention to every stage of processing. Fully ripe cherries are selectively hand-picked and floated to remove under-ripe and dried fruit before undergoing an initial oxidation phase. The cherries are then inoculated with a selected yeast culture and fermented in sealed tanks under controlled temperatures, encouraging the development of complex esters and pronounced tropical fruit character.\u003c\/p\u003e\n\u003cp\u003eFollowing fermentation, a thermal shock is applied to further enhance sweetness and aromatic complexity before the coffee is slowly dried on raised beds in the sun for 20–30 days.
