About the farm:
Grown in the highlands of Huila, Burbujas captures the vibrant energy and clarity the region is known for. Produced by dedicated smallholder families farming at high elevation, this lot benefits from rich soils, ideal climate conditions, and meticulous hand-harvesting to ensure only perfectly ripe cherries are selected.
What sets Burbujas apart is its hybrid washed fermentation. After careful cherry sorting, the coffee undergoes a controlled fermentation that bridges traditional washed processing with extended, precision-managed fermentation techniques. This approach enhances aromatic intensity and sweetness while preserving the clean structure and brightness of a classic washed profile.
The result is a cup that is expressive yet refined layered fruit character, crisp acidity, and a structured finish. Burbujas is a reflection of both innovation in processing and the deep-rooted dedication of Huila’s smallholder producers.
Vibrant acidity reminiscent of grapefruit and the depth and sweetness of Cola.
