About the farm:
This Sidra comes from Cultivares Farm in Tarqui, Huila, Colombia, where Santiago Noriega is developing a range of distinctive coffees with a strong focus on variety and processing. Grown at 1,650 MASL, this lot highlights the expressive potential of the Sidra cultivar through an extended and carefully controlled fermentation.
Ripe cherries are selectively hand-picked and floated to remove under-ripe and defective fruit before undergoing 92 hours of anaerobic fermentation in sealed bags. After depulping, the coffee is sealed again for a further 72 hours of oxidation. It is then washed, deliberately retaining around 75% of the mucilage, before being dried slowly on raised African beds for 10 days.
Cultivares is a family-led project that reflects Santiago’s growing commitment to specialty coffee. Having grown up around coffee through his parents, Aldemar and Diana, Santiago has developed his own approach to production, exploring how different cultivars and processing techniques can be used to create more distinctive coffees.
The result is a highly considered Sidra that combines an expressive cultivar with an unusually long fermentation and honey-style processing, giving the coffee plenty of complexity and character.
High acidity that’s incredibly clean and aromatic, with an almost Geisha-like elegance and complexity.
