About the farm:

Originating from the lush hills of Colombia, El Jaragual is a truly unique coffee that showcases the skilful craftsmanship of Jorge Mira. This rosado varietal has been meticulously processed through an innovative and precise method, ensuring a cup that is uniquely perfumed, sticky and complex.

The journey of this Rosado begins with hand-picking only the ripest cherries, with a strict focus on achieving a minimum of 90% perfectly ripe fruit. After harvesting, the cherries undergo a floating process to carefully eliminate any green, overripe, or dry cherries, ensuring that only the best cherries make it through.

The cherries are then placed in food-grade plastic drums for 24 hours of oxidation, which gently starts the transformation of the fruit. Following this, the cherries are pulped dry, and a second oxidation phase occurs for 24 hours to remove the mucilage. This is followed by a unique thermal shock washing process, where the cherries are washed at a precise 45°C, adding depth and clarity to the flavour profile.

Fermentation is where El Jaragual truly shines. The cherries undergo a 36-hour fermentation process at a controlled temperature below 25°C, using carefully selected yeast to enhance the natural flavours. Once fermentation is complete, the coffee is washed at a cool 5°C to lock in its flavours and seal the fermentation process.

Finally, the beans are dried for 76 hours at an average temperature of 40°C, allowing the coffee to reach its optimal moisture content while preserving its freshness. The beans are then carefully stabilised in GrainPro-type bags to ensure consistency and preserve their quality.

The result is a cup that is both bright and vibrant, with a tropical complexity that highlights the unique qualities of this rosado varietal. With notes that are both bold and floral, El Jaragual is a testament to the dedication and innovation behind every stage of its production.
