About the farm:
Catarina is a first-generation coffee grower based in Aldea Com, Huehuetenango, where she lives with her family. Together with her husband, she began cultivating coffee on a few small plots of land. As their harvests improved and income increased, they gradually expanded their farm to grow more coffee.
Named after her husband’s family name, Finca Gómez is a testament to their shared dedication. The coffee is carefully handpicked and processed the same day at a small wet mill near the farm. After depulping, the beans ferment without added water for 22–24 hours. They are then sun-dried for approximately four days, turned frequently for consistent drying during eight-hour intervals each day. Catarina, her husband, and a small team of workers all take part in the meticulous processing, ensuring quality at every step.
This lot has slightly higher acidity compared to other coffees in our Blue Category, but it’s beautifully balanced by rich, syrupy sweetness and smooth malty flavours.
