About the farm:
Grown by Jorge Osorio and his team at El Paraiso farm, this coffee showcases the classic character of Colombia’s Variedad Colombia, a variety developed by Cenicafé to combine the quality of Caturra with the resilience of the Timor Hybrid. Released in 1980, Variedad Colombia was bred to offer Colombian farmers a productive, adaptable plant with strong resistance to coffee leaf rust, while retaining the bright, expressive cup qualities associated with traditional Colombian varieties.
Jorge and his team carefully select only the ripest cherries, which are then hand-sorted and floated to remove underripe or defective fruit. The cherries undergo a 30-hour underwater fermentation, following Cofinet’s carefully controlled protocol. This process allows the sugars and organic acids within the coffee to develop gradually, enhancing sweetness, acidity and overall complexity.
After fermentation, the coffee is pulped and thoroughly washed before being dried slowly in parabolic dryers. The parchment is spread in thin layers and carefully monitored throughout drying, with the aim of reaching an optimal moisture content of 9.5–11%.
The result is a bright, clean and lively Colombian coffee, with the balanced sweetness and acidity that Variedad Colombia is known for. Expect a cup with citrus and red fruit character, caramel sweetness, bright acidity and a smooth medium body.
