These Bourbon Sidra beans from Huila are meticulously crafted to showcase their intricate and nuanced flavour. Once harvested, the cherries are pulped and washed to eliminate any residual mucilage. The beans are then soaked in water for 16 hours, undergoing a delicate fermentation process that enriches their clarity and complexity. After fermentation, the beans are sun-dried on raised beds for 10-14 days, allowing them to fully develop their unique characteristics.
Sidra is a unique coffee variety that is often grown in regions like Ethiopia and parts of Central and South America. It is a natural hybrid, which means it is a cross between two or more coffee varieties. Sidra is known for its high quality and distinctive flavour profile, typically offering a bright acidity, floral and fruity notes.
