About the farm:
Zarza Coffee is a third-generation family project from the mountains of Bruselas, Huila, known as the Coffee Capital of Huila. The Gasca family has built Zarza around a combination of tradition, innovation and a relentless focus on quality, with a strong emphasis on traceability and sustainable farming. Alongside coffee, the family also keeps bees, helping to support biodiversity across their land.
This Pink Bourbon is a beautifully expressive natural coffee, produced with meticulous attention to every stage of processing. Fully ripe cherries are selectively hand-picked and floated to remove under-ripe and dried fruit before undergoing an initial oxidation phase. The cherries are then inoculated with a selected yeast culture and fermented in sealed tanks under controlled temperatures, encouraging the development of complex esters and pronounced tropical fruit character.
Following fermentation, a thermal shock is applied to further enhance sweetness and aromatic complexity before the coffee is slowly dried on raised beds in the sun for 20–30 days. The result is a vibrant and highly aromatic coffee that showcases the potential of Pink Bourbon, with layers of tropical fruit, sweetness and complexity throughout the cup.
Since establishing Zarza Coffee in 2022, the Gasca family have continued to refine their approach to varietal selection and processing, creating coffees that are a clear expression of their land, family heritage and dedication to quality.
