Mosaic is our 'House coffee'
The aim with Mosaic is to offer a coffee of which the flavour profile remains the same all year round even if the components change ever so slightly.
Mosaic will offer a layered and full bodied espresso or filter brew and will always shine through any milk based drink.
Our current coffee under the 'Mosaic' name tag is a full flavoured Brazilian from Edison Ferreira at his farm Sitio Gourita, in the Minas Gerais region. A vast tropical savannah in the centre of Brazil.
Edison’s coffee story began at 15 on a dairy farm that also grew coffee. In 1986, he revived coffee planting on his family’s land, despite his father’s past struggles with frost. Starting with 3,000 trees, he gradually expanded.
In 2018, Edison shifted to specialty coffee, prioritising quality over quantity. This transformed Sítio Gourita, boosting both coffee quality and sustainability. He grows the Topázio variety, known for its smooth, chocolatey flavour. In 2025, the farm produced 575 bags of specialty coffee from a total harvest of 1,200 bags.
Edison and his wife, Kerli, now run the farm, with their children, Edison Junior and Maria Eduarda, helping out. Kerli oversees post-harvest processes, and the family handles farm management year-round, using both manual labor and mechanised harvesting.
Edison’s focus on quality and sustainability reflects a forward-thinking approach, ensuring a thriving farm for future generations. With his son studying agronomy, the family’s coffee legacy is set to continue.
