About the farm:

The beautiful Finca Guadalupe Zaju spans 310 hectares along Chiapas, Mexico’s renowned ‘Ruta de Cafe’, near the Guatemalan border. Situated in the Soconusco region alongside famed farms like Fincas Hamburgo and Irlanda, it plays a key role in reviving the area's reputation for high-quality coffee. 
All coffee on the farm is selectively hand-harvested and sorted again at the mill. It is pulped with a Penagos 7500 ecopulper, separating ripe from underripe or underweight cherries and removing debris. The coffee then passes through a demucilaginator to remove the sticky mucilage.
